Breakfast

Start your day on a happy note!

Tortilla with Toppings Toast tortilla in skillet with coconut oil on medium-low heat. Sprinkle with cinnamon. Add spoonful of peanut butter. Toss fresh fruit, pumpkin seeds, and coconut flakes on top. Slide out of the skillet and enjoy with a dark cup of coffee. click here for YouTube video

Breakfast Sandwich Prepare biscuits from a tube. Scramble 8 eggs. Fry 8-10 pieces of Canadian bacon in skillet. Build a sandwich! Serve leftover biscuits with honey and jam. click here for YouTube video

Garlic Eggs Scramble 6 eggs in bowl. Melt butter in skillet on medium heat. Add 1-2 cloves freshly pressed garlic. Sauté for 1 minute. Add eggs. Cook through. Serve with toast. click here for YouTube video

Bacon and Tomato Sandwich Spread mayo evenly onto two slices of bread. Add salt, pepper, and dill. Add sliced tomatoes and bacon. click here for YouTube video

Coconut Rice Pudding Combine half cup of leftover rice, 1 can coconut milk, 1-2 tsp vanilla, your preferred spices, and shredded coconut if desired. Add a modest amount of maple syrup (or preferred sweetener). Bring to medium low simmer for 15-20 minutes.  Remove from heat. Chill, or serve warm.  Serve with almonds, or a side of bacon.  click here for YouTube video


Lunch and Dinner

Protein + Healthy Thing + Comfort Item

Friday Night Fish Sticks Prepare fish sticks from a box. Serve with frozen vegetables (see under Sides)

Packaged Ravioli Prepare ravioli from package. Do not overcook! Drain pasta. While pasta is draining – make sauce: 1-2 tbsp butter, generous pour of olive oil, lemon juice, salt & pepper, herbs, chili flake. Toss ravioli with sauce. Serve with fresh fruit.

Savory Rice Cooked rice, butter, dill, cheese, salted almonds – serve with broccoli

Sweet Rice Cooked rice, vanilla almond milk, honey, butter, cinnamon, almonds – serve with bananas and apples. click for YouTube video

One Pot Miracle Pasta, frozen vegetables, meat. Cook noodles, drain. Brown meat in skillet, add vegetables. Add 8 oz chicken stock, cook through, and season to taste. Add noodles and two pats of butter. Stir and serve. click for YouTube video

Tortilla Pizza Toast one whole wheat tortilla, add 1-2 spoonfuls of tomato sauce. Add cheese, heat until cheese is melted (low heat in skillet, or in toaster oven). Serve with cucumbers and strawberries. click here for YouTube video

Turkey and Cabbage 2 lb ground turkey cooked with coconut aminos, 3 cloves garlic, and black pepper – cook through. Add 1 bag plain coleslaw mix, salt, 2 tsp apple cider vinegar (or squeeze lemon on it), and 2-3 tbsp horseradish mustard. Cover and steam until cabbage is softened, stirring occasionally. see photo here


Sides and Snacks

Keep it simple

Frozen Vegetables Cook according to package instructions. Add butter, oil, lemon, and seasoning. click for YouTube video

Raspberries, Almonds, and Popcorn with White Chocolate Put raspberries, almonds, and popcorn on a plate. Sprinkle popcorn with dill. Melt white chocolate wafers according to package. Drizzle melted chocolate onto berries, almonds, and popcorn. click for YouTube video

Green Smoothie 1-2 cups frozen greens,
1 banana, shredded coconut, cinnamon, green grapes, about 1 cup almond milk.

Easy Vanilla Pudding 2/3 c sugar, 1/4 c cornstarch, 1/8 tsp salt  3 egg yolks  3 c milk, and 1-2 tsp vanilla. Whisk dry ingredients together. Add milk and egg yolks. Cook in saucepan over medium heat, until it starts to thicken (don’t bring to full boil). Add 1-2 tsp vanilla.  Serve warm, or chill. Goes great with strawberries! see YouTube video here

Pineapple Fluff 20 oz can crushed pineapple mixed with 1 packet vanilla pudding mix. Gently stir in 1 c whipped cream. Chill. Serve with vanilla wafers. see YouTube video here
